It's possible that the smoky smell of baijiu will be one of the first things you notice about it. A typical bottle of baijiu has an alcohol content that is equivalent to an average of 110 proof. This should not come as a surprise given that the liquor is produced by fermenting corn.

The several kinds of grains that go into making baijiu each contribute their own unique flavor. Typically, production occurs in the northern and southern regions of China. In the southern region, glutinous rice is the primary component of baijiu, whereas sorghum is the primary component in the northern region.
